ClassGraphic Many deaths and chronic diseases in the United States are preventable and linked to our diet. The Power of a Plant Based Diet course explores the science behind a plant-based diet, focusing on Dr. T. Colin Campbell's The China Study. Students will learn how nutrition influences chronic diseases like cancer, heart disease, diabetes, and autoimmune disorders, and how a plant-based diet can prevent and even reverse these conditions. This course provides practical tips for transitioning to, and maintaining, a plant-based lifestyle. By the end, students will be empowered to make informed dietary choices that support long-term health and well-being.

This course is taught by Marilyn Tarkalson, a graduated of ISU with a bachelor's in Science. She also holds a Plant-Based Nutrition Certificate from T. Colin Campbell Center for Nutrition Studies.
